Chef Charles Thain, the "Hunting and Fishing Chef", has over 25 years experience in the restaurant business. A culinary graduate of the prestigous Johnson and Whales Univeristy, he completed his internship at the Royal Palms Yacht Club in Boca Raton, Florida. At the helm in kitchens from Ocracoke Island and Nags Head in  North Carolina, the Tidewater Area of Virginia, and finally here in the Eastern Shore. Charles knows the deal when it comes to handling and preparing fresh, local seafood. No doubt that is his specialty.

Shannon is a Texas implant who enjoys higher learning and the business aspect of the Eastville Inn. She is a graduate from Old Dominion University with a BS in Biology and a minor in chemistry. She has 15 years of restaurant and business experience. Attention to detail and high services standards are very important to her.
